Caption: Instructions Mix the yeast and 1 tbsp of maple syrup in warm water. The water should be quite warm but not scalding. Wait for about 5 min for the yeast to activate, it should start foaming on top
Put the flour in a large bowl, add the salt, the yeast mixture and the olive oil and start kneading
Depending on the kind of flour you used, you may need to add a little more water to get a consistency that is soft and easy to knead yet not very sticky and fluid. You shouldn’t need any more than ¼ cup of additional water, so add very slowly
Knead the dough for a few minutes and let it wait, covered, for 20-30 minutes until it approximately doubles in size
Use a roller to flatten to dough, as thin and wide as you can
For the filling, mix the tahini and maple syrup in a bowl and spread over the dough
Drizzle the melted chocolate on, but save a little chocolate for topping
Sprinkle the sesame seeds and the walnuts, again save a little for topping
Roll the dough into a cylinder (see the pictures or the video)
Cut the cylinder in half longitudinally
Twist each half a few times
Spiral them in an oiled iron cast pan
Drizzle the rest of the chocolate over and add the rest of the sesame seeds and walnuts
Bake for about 45 minutes in 350F (preheated), until it gets a golden crust on top
