Pesto, Arugula, Onion, Feta, and Eggs
Caption: Ingredients
For the Flatbread:
1 3/4 cups bread flour
3/4 cup water
1 teaspoon coarse salt
1 teaspoon baking powder
1 tablespoon olive oil + more for brushing
Toppings:
2 sweet potatoes
2 tablespoons quality pesto sauce (or make your own)
1 teaspoon garlic paste
2 cups arugula
2/3 eggs
1/2 small red onion
Feta cheese
Salt/pepper to taste

Caption: Preheat oven to 400 degrees Peel and cut sweet potatoes into 1 inch cubes
Caption: In a large skillet add 1 tablespoon olive oil and the sweet potatoes.
Roast the potatoes for 35-40 minutes until brown and crisp--stirring every 7-10 minutes.
Chop onion and place in the pan with the potatoes after 20 minutes.
Caption: Remove potatoes and onions from oven when done and preheat to 425 degrees.
Prepare your flatbread

Caption: Combine flour, water, oil, baking powder, and salt until dough appears. Transfer to a floured surface and roll into a circle. I added rosemary (optional).
Caption: Once dough is rolled out brush with olive oil, spread pesto and garlic paste and place in oven for 10 minutes.
Fry two eggs sunny side up and prepare your pizza.
Caption: Check flatbread--it should be hardened and browning at this point. Add arugula, cooked sweet potato, onion, fried eggs, and top with salt and pepper.
Bake pizza for another 5-7 minutes.
