Caption: My mother is the kindest person I know. It was especially kind of her to let me document her pudding making day, since she's not always that fond of baking and definitely not that fond of being photographed. She loves her kitchen and has always hoped to have a giant communal table where guests and family would gather around, sharing food prep duties and stories. It didn't exactly work out that way as we are a super tiny family and friends have moved frequently. This is part of why it was so special to be able to spend a day with her. Just hanging out and making the pudding that used to be my dad's favourite. It might just have been the two of us, but nowhere feels more like home.

I've adapted the recipe to be vegan and gluten free.
I've also halved the recipe to serve four people.
Preheat oven to 180 degrees Celsius

1 cup gluten free flour with xanthan gum
1 tbsp baking powder
1/4 cup vegan margarine (cubed)
1/4 cup apple sauce
1 tbsp coconut milk
120 ml apricot jam
{sauce}
3/4 cup boiling water
1/2 sugar
1 tbsp vegan margarine
