Caption: Polish "Mould" Cake Plesniak
Caption: PLESNIAK (plesn means mould) is very popular cake in Poland. Is combination of two cakes , tangy blackcurrant jam and meringue.
And why is called " mould" cake ? Because after baking , meringue create gooey layer which look a like mould.

Caption: All Ingredients you will need
• 300g flour
• 200g butter
• 2/3 cup sugar + 2tbsp
• 4 eggs , separate egg yolks and whites ( leave on side, you are going need them later)
• 1 1/2 tsp baking powder
• pinch of salt
• 2tbsp cocoa powder
• 1 jar of blackcurrant jam or similar one
Caption: Method All ingredients mix together to make a crust.
Ready one divide to 3 equal parts. Add cocoa powder to one of them.
Form a ball from each crust, wrap in a foil and put in the fridge for 30 min.
Grease and flour your baking pan.
Take crusts from the fridge. Take one light crust and press to the bottom of pan.
(Now you can heat your oven to 180 C/350F)

crumble cocoa crust all over creating second layer
Caption: Beat 4 egg whites with a mixer until they form a soft peaks then add gradually sugar, spoon by spoon (2/3 cup). Continue beating until you get stiff and glossy peaks.

Caption: Crumble last part of light crust on the meringue. Put into hot oven and bake for 30-40min
Caption: Allow cake to cool. Sprinkle icing sugar on the top.
