Caption: Here is a quick and easy recipe for curry roasted pumpkin seeds.
What you need:
Seeds from a pumpkin (I had about 1 and a half cups)
1 teaspoon olive oil
1/4 teaspoon salt
1/2 teaspoon curry powder
Fresh ground pepper to taste

Caption: Scoop the seeds and remove the stringy bits

Caption: Rinse the seeds to remove any residue and then pat dry

Caption: In a small bowl, toss with olive oil, salt, pepper and curry powder

Caption: Spread on a baking sheet. Roast at 300 degrees for about 10 minutes.

Caption: Eat as a snack or use as a garnish on pumpkin soup (coming soon!)
These are best eaten the same day. They lost some crispiness the next day.
