Caption: PANCAKES
{recipe yields 10 small pancakes}
1 cup gluten free flour
2 tbsp cocoa powder
1/4 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/2 tbsp ground flax + 2 tbsp water {combined}
200 ml coconut milk
1 tsp apple cider vinegar
60 ml maple syrup/agave nectar
1/2 tsp vanilla extract
SAUCE
50 g dark chocolate
40 ml maple syrup

Caption: Combine flax and water. Allow to stand for 5 minutes.
Combine coconut milk and vinegar. Allow to stand for 5 minutes.

Caption: Sift dry ingredients together in medium bowl
Caption: Add flax mixture, coconut milk mixture, vanilla and maple syrup to dry ingredients. Mix well with metal spoon.
If mixture is too stiff, add water, one tablespoon at a time (no more that 45ml in total) for more runny consistency.

Caption: Heat a non stick pan, on medium heat, on stove top.
Spoon tablespoons of batter into pan. Cook for two minutes and flip pancakes with a spatula. Cook for further two minutes and remove from pan once cooked through.

Caption: SAUCE Break chocolate into small pieces. Carefully melt together with maple syrup in microwave oven.
Stir until combined. Pour over pancakes as desired.
