Caption: This recipe yields twenty cake slices (8cm x 3cm) or eighteen cake slices (5cm x 5cm)
I used two square cake pans (16cm each)
Grease pans and preheat oven to 160 degrees Celsius
Caption: CAKE
1 3/4 cups gluten free flour with xanthan gum
1/4 cup raw cocoa powder
2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
120 ml apple sauce
180 ml agave nectar
100ml coconut oil
5 ml orange extract
30 g melted dark chocolate
150 ml warm water
10 ml lemon juice
Caption: TOPPING
200ml chocolate ganache
3 clementines / small oranges (one segment per cake slice)
30 g melted dark chocolate for dipping orange segments

Caption: Sift flour, cocoa, baking powder, baking soda and salt together.

Caption: Add melted chocolate, oil, agave, orange extract and apple sauce. Mix well.

Caption: Combine lemon juice and warm water and add to batter. Mix with metal spoon until completely incorporated.
It might take a while. Just keep mixing. It will happen.

Caption: Divide batter evenly between greased baking pans. Bake for 20 minutes.

Divide clementines into segments. Dip each segment halfway into melted chocolate. Place on parchment/baking paper and refrigerate until needed.

Caption: Allow cake to cool completely on wire rack.
Spread with layer of chocolate ganache.
Cut cake into your preferred cake slice size.
Top each slice with a chocolate dipped orange segment.
