200 g butter
2 eggs
2 tsps vanilla extract
1 whole vanilla pod
2 cups gluten free flour mix
1 tbsp potato flour
1 tbsp rice flour
1 1/2 tsp xantham gum
4 tbsp ground almond
1 1/4 cups brown or palm sugar
2 tsps water or rice milk
1 1/2 cups nuts, roasted (walnuts and/or pecans)
1 cup chocolate chip
*150 g dark chocolate
As much as possible,

Caption: Start with roasting the nuts. An easy way is on a pan, over low heat, with a lid on. Uncover the lid once in a whole to release the moisture, and, swirl. When done, set aside to cool. Meanwhile heat the oven to 180-190 degrees.

Caption: While the nuts roast and the oven heats up, take one vanilla pod, split open along the edge, scrape the beans, and slice the rest into very thin slivers.

Caption: Place the dry ingredients - the different flours, ground almond, xantham gum, salt - into a bowl, and mix well.

Caption: Blend the butter and eggs till creamy. Add the vanilla extract, the vanilla bean and slivers and blend again till even.

Caption: Add the dry ingredients slowly. If needed, add rice milk or water to moisten the dough.

Caption: Coarsely chop the nuts once they've cooled. Fold in the nuts and chocolate chips evenly into the batter.

Bake at 180-190 C for 12-15 minutes.
A toothpick inserted should come out clean, with the cookies lightly brown.
