Caption: Sage Chicken Casserole This recipe is for six and it takes about an hour and half to cook.
2 tbsp butter
6 chicken breasts
2 tbsp butter
4 shallots, chopped
2 garlic cloves, minced
500 g fresh mushrooms, chopped
0,5 dl apple juice or white wine
4 tbsp butter
3 ½ tbsp all-purpose flour
5 dl chicken broth
4 dl (brown) rice
1 dl grated Parmesan cheese
2,5 tbsp chopped fresh parsley
1,5 tbsp chopped fresh sage
0,5 tsp salt
0,5 tsp pepper
1 dl sliced (toasted) nuts
Garnish: fresh sage leaves and 0,5 dl (toasted) nuts
Caption: PREPARATION
1. Preheat oven to 200 °C
2.Melt 1 tbsp. butter in a skillet over medium-high heat. Add half of chicken, and cook both sides a couple of minutes or until browned. Repeat with 1 tbsp butter and remaining chicken. Wipe skillet clean.
3. Melt 2 tbsp. butter in skillet. Add shallots, and sauté minute or two. Add garlic, and sauté less than 30 seconds. Add mushrooms and cook, stirring often for couple of minutes. Stir in apple juice (or white wine), and cook, stirring often for about one minute.
4. Melt 4 tbsp. butter in a saucepan over medium-high heat. Whisk in flour; cook, whisking constantly. Gradually whisk in broth. Remove from heat. Add rice, Parmesan, parsley, sage, salt, pepper, nuts and shallot mixture. Spoon into a lightly greased baking dish. Top with chicken.
5. Bake at 200 °C for 30 minutes.
6. Sprinkle with nuts and sage leaves.
