1 big bunch heirloom carrots, halved lengthwise
2 tablespoons olive oil, separated
2 tablespoons aka miso (red miso paste)
1 tablespoon hot water
1 1/2 teaspoons shoyu (soy sauce)
2 teaspoons freshly grated ginger
1/2 teaspoon kosher salt
1 medium shallot, chopped
1 bulb garlic, peeled and cloves separated
1 tablespoon pure maple syrup
3 dried red chili peppers, skins removed
1/2 cup freshly grated broccoli sprouts, to garnish

Caption: | 1 | Glaze halved carrots with 1 tablespoon olive oil and set aside.

Caption: | 2 | In a small bowl, prepare the miso glaze. Add hot water to miso paste and stir until smooth. Add shoyu, ginger, and salt. Mix well. Pour glaze over carrots and toss until coated.
