Caption: 200g self-raising flour
180ml sunflower oil
180g light muscavado sugar
3 large eggs
1 tsp vanilla extract
250g cooked pumpkin or butternut squash
100g dried cranberries
Zest 1 orange
2tsp ground cinnamon
1tsp nutmeg
1 tsp bicarbonate soda

200g tub full fat cream cheese
80g icing sugar

Caption: Instructions Heat the oven to 180C/356F/Gas Mark 4.
Line a 12 hole muffin tray with paper cases.
Pour the oil into a mixing bowl & add the sugar, eggs, vanilla, and beat together.
Mix in the flour, cinnamon, nutmeg & bicarbonate soda.
Stir in the pumpkin, cranberries & orange zest to the mixture, which should be quite wet.

Caption: Spoon the mixture into the cases filling them 2/3 full.
Bake for 20-25 mins until cooked.
Cool completely on a wire rack before adding the frosting.
