Caption: During the rush of the holidays, there's nothing better than slowing down to catch up with a loved one over coffee. And the addition of a fresh batch of spiced madeleines make it even easier to linger over good conversation.

2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground all spice
1 teaspoon baking powder
3/4 teaspoon salt
6 large eggs, room temperature
1 cup granulated sugar
2 tablespoons dark brown sugar
2 sticks unsalted butter, melted
1 tablespoon plus 1 teaspoon honey
3/4 teaspoon pure vanilla extract

Whisk flour, cinnamon, ginger, all spice, baking powder, and salt in a bowl. Set aside.
Mix eggs and sugars in the bowl of a stand mixer on high until pale and fluffy, about 10 minutes. Batter should form a thick ribbon when beater is raised out of the mixture.
Fold in flour mixture in two additions, fully incorporating. Then fold in melted butter, honey and vanilla.
Refrigerate, covered, for at least 2 hours, or overnight.
Caption: Remove batter from fridge and let stand for 10 minutes. Preheat oven to 350 degrees and butter the madeleine pans.
Add batter to a pastry bag and pipe into molds until about three-quarters full.
Bake for 8-11 minutes, until just lightly browned. Immediately shake madeleines out onto a kitchen towel. Wipe off pan, add more butter to molds and repeat for remaining batter.
Makes about two dozen madeleines.
