Caption: Rhubarb Crisp 1 cup flour
3/4 cup oatmeal
1 cup brown sugar
1/2 cup shortening
(Or coconut oil)
1 teaspoon cinnamon
(I also added 1 tablespoon ground flax seed)
Grease 8 x 8 glass dish & preheat oven to 350•.
Mix ing. with pastry cutter & press half of mixture into baking dish. Reserve other half for topping.

3 tablespoons cornstarch
1 cup sugar
1 tsp vanilla
Combine one cup water with cornstarch & add sugar. Heat in small saucepan until thickened; add vanilla. Mix & pour over 4 cups of diced rhubarb spreading evenly.
Lastly, top with remaining crumb mixture & bake at 350• for 1 hour.
Cool completely before serving.
