This is so easy to make and the rhubarb gives a refreshing tartness to the sweet white chocolate and each little square is gooey and soft.
Plus the little flecks of pink peeking through make this an ever so pretty treat.

2 sticks of rhubarb, chopped
125g plain flour
1 tsp baking powder
pinch of salt
100g butter at room temperature, plus extra for greasing
175g light brown sugar
1 egg
1 tsp vanilla extract
75g milk chocolate chunks

Caption: Method
1. Preheat the oven to 180C
2. Grease and line the bottom of a 20cm square cake tin.
3. Cream the butter and sugar until fluffy and smooth, then beat in the egg and vanilla extract until well combined
4. Add the flour, baking powder, salt and chocolate and mix thoroughly.
5. Lastly add the rhubarb, mix until the pieces are evenly distributed
6. Spoon into the tin and bake for 20-25 mins until golden brown and the centre is almost firm
7. Remove from the oven, transfer to a wire rack, allow to cool almost completely before cutting them into squares.
