Caption: I cannot believe it's already November! It seems like just yesterday the trees were in full bloom and today they are losing their leaves. But I am not complaining, Fall is my absolute favorite time of the year. I love watching the seasons change, the landscape turn gorgeous warm tones, and most of all the baking; all the glorious baking.
There is nothing like sitting down and enjoying a warm pumpkin muffin fresh out of the oven and a cold glass of milk. It is fall paradise. I don’t know about you but my mouth is watering just thinking about it!

Caption: This recipe creates perfect pumpkin muffins every time. I have eaten a lot of pumpkin muffins, and these are the absolute best. They are everything a pumpkin muffin should be: dense, moist, and full of flavor!
If you plan on making these for an event or gathering you should go ahead and double the batch because I guarantee you will eat a few before they even have time to cool.

Caption: *Makes 6 jumbo muffins
• 2 1/2 cups (312.5 g) all-purpose flour
• 1 cup (120 g) whole wheat flour
• 1 teaspoon baking powder
• 2 teaspoons baking soda
• 1 teaspoon salt
• 2 teaspoons ground cinnamon
• 1 teaspoon ground nutmeg
• 4 eggs at room temperature
• 1 1/2 cup (340 g) granulated sugar
• 1 cup (220 g) brown sugar
• 1 can (15 oz) pumpkin puree
• 3/4 cup (157 g) coconut oil, ,melted
• 1 teaspoon vanilla

Caption: 1. Preheat oven to 400 degrees F. Grease jumbo muffin tin or line with paper liners.
2. In large bowl, whisk together flours, baking powder, baking soda, salt, cinnamon & nutmeg.
3. In medium bowl, beat eggs & sugars until well combined. Add pumpkin, coconut oil, & vanilla and mix until fully incorporated.
4. Fold wet ingredients into flour mixture. Mix until just combined.
5. Fill prepared muffin cups to the top with batter. Bake for 7 minutes at 400 degrees F. Reduce oven temperature to 350 degrees F. Continue baking for another 23-25 minutes, until toothpick inserted in center comes out clean. Allow to cool in pan for 5 minutes before transferring to wire rack to cool completely.
