Caption: This is my version of Minimalist Baker's recipe. It doesn't require an ice cream maker for us not fortunate to have one just yet
This recipe is vegan, soy-free, and uses a lot less sugar than the regular recipes
Picture
Caption: The base of the ice cream are cashews, coconut milk, brown sugar & fresh mint leaves
Picture
Caption: Steep the mint leaves in the coconut milk. Add sugar. Add mint essence for extra flavor. Blend completely. Store in the freezer.

Caption: Then you have to make the raw brownies, which are the perfect topping for this base

Caption: Make brownies with dates & almonds, soaked overnight then drained. Add a couple of teaspoons of cacao powder. Blend until you have a nice chunky paste.
Freeze them until you are ready to add them to the mint base

Caption: A note on the ice cream:
In order to create a creamy base, stir the mint cream for at least every half an hour with a spoon. This will break the water elements of the cream, and will create a silky ice cream by combining the fatty elements while it freezes
