Caption: Holiday Mini Pies
Caption: I love using #Pinterest to plan meals, the table, etc... Recipes all in one place, table setting ideas are there too.
These two pies that I made, I found the recipes there.
In my house, we like lots of different desserts, so I tend to make mini options so we can try all of it without feeling like we are over doing it.

Caption: Set oven to 450 and line a baking sheet with parchment paper.
Sprinkle a little flour on your work surface and roll out the pie crust.
Use a 1 1/2" biscuit cutter to cut out mini pie circles.
Place one or two blueberries in the center of each circle and sprinkle with a little sugar.
Fold up the sides of each circle, like a taco, then pinch the adjacent corners.
For the egg wash, mix one egg with 1 teaspoon of water to make the egg wash. Now use you egg wash to brush over each pie bite.
Place each bite on the baking sheet
and sprinkle a little more sugar.
Bake for about 10 mins.
Eat alone or with vanilla ice cream.
Enjoy!

*2 teaspoons fresh lemon juice
*1/2 teaspoon cinnamon
*1/4 cup sugar
*2 teaspoons all-purpose flour
*8 store-bought soft caramels, roughly chopped
*Sea Salt

Combine the apples, lemon juice, cinnamon, sugar and flour, stirring until thoroughly mixed. Set aside.
Roll dough out on a well floured surface. Then use a 3" biscuit cutter ( or a drinking glass or a jar) to cut out your circles. Make sure you have an even number.
Place half of the cut out dough circles on a parchment paper lined cookie sheet.
Spoon a small portion of the apple filling into the center of each circle.
Next place a portion of the caramels on each pie and a pinch of sea salt.
Place a second dough circle atop each filled circle, then use a fork to crimp the edges together.
Brush each pie with the egg wash and then, with a sharp knife, cut three cents on top of each pie. Sprinkle with a little more sugar.
Bake for about 15 mins or until golden brown.
Enjoy!
