wash & peel carrots
toss carrots in large bowl with olive oil
season with salt & pepper
roast carrots until golden brown
remove, cool, refrigerate until ready to use

Caption: In a small saucepan combine honey & fresno chili.
Infuse honey over medium low heat for 10 minutes.
Remove chili from saucepan and let honey cool.
In a small bowl mix yogurt, cumin, lemon zest YOGURT DRESSING
