Parsley, tomatoes, romaine, cucumbers, green peppers, radishes, scallions , onions and of course, toasted Pita. The ratio differs from one person to another.

Caption: People like to add other vegetables and greens to the mix. I like Arugula for its peppery taste. This time I used the tender leaves of the radishes. Purslane or Mash may be added or mixed salad greens instead of Romain. I sometimes add finely diced jalapeño.

Caption: People in general, like to add chopped mint to the salad as part of the seasoning. I like to use oregano and savory, since I grow them in my garden. Make sure to chop and add the herbs just before you toss the salad.

Juice of 1 lemon
1 clove of garlic
1 Tbs pomegranate molasses
1 tbs Sumac
2 tsp ground oregano or Zaa'tar
1/4 c extra virgin olive oil
1 tsp sea salt
1/2 tsp black pepper

Caption: Using a mortar and pestle, mash the garlic clove with salt, pepper and herbs. Mix in molasses and the lemon juice. Drizzle olive oil slowly mixing with the pestle using circular motion.
