Caption: Poppyseed & Grapefruit Cake
Caption: What you will need:
FOR THE CAKE:
1 white cake mix (we prefer Duncan Hines)
3 egg whites
1 cup water (minus 3 tablespoons)
3 tablespoons fresh squeezed grapefruit juice
1/4 cup vegetable oil
1.5 tablespoon poppyseed
FOR THE FROSTING:
4 cups powdered sugar
5 tablespoons fresh squeezed grapefruit juice
1/2 cup room temperature butter
2 teaspoons of poppyseed
2 9in round cake pans

Caption: Preheat oven to 325f.
In the bowl of a stand mixer add the cake mix, egg whites,water, grapefruit juice and oil. Mix slowly for 30 seconds. Now turn the mixer to high and beat for 2 minutes. After 2 minutes add 1.5 tablespoons of poppyseed's and mix until incorporated.

Caption: Butter each cake pan and place precut round of parchment paper into bottoms of pans. Now butter the parchment paper and lightly flour entire pans.
Divide the cake batter between the cake pans and place in oven. Bake for 25 minutes, or until inserted toothpick in the center of each cake comes out clean.
Allow cakes to cool in the pans for 5 minutes, then turn cakes out on to cooling rack. Allow cakes to cool completely.

Caption: Now mix up the frosting.
Caption: In the bowl of a stand mixer, place room temperature butter and two cups of powdered sugar. Turn mixer on lowest speed and mix until incorporated, now add 2 tablespoons of grapefruit juice and continue to mix on lowest speed. (It's still pretty lumpy at this point; don't sweat it.)
Now turn off the mixer and add the last two cups of powdered sugar and the remaining 3 tablespoons of grapefruit juice. Again turn mixer on the lowest setting until powdered sugar is incorporated. Once it is all mixed in, turn your mixer to medium high speed and beat frosting until nice and fluffy, or about 2 minutes. You want an easy to spread frosting, light and fluffy. If the frosting seems too hard, add more juice, a teaspoon at a time. If the frosting seems too wet, add more powdered sugar, a tablespoon at a time.

And then add poppyseed's to remaining frosting in bowl and mix.
