Caption: Ingredients 1 cup all-purpose flour
2 cups Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 zucchini, thinly sliced (about 1/4 inch)
3 large eggs, beaten
1 teaspoon dried oregano
Salt and pepper to taste

Caption: Before you begin, pat zucchini slices dry by placing slices in between paper towels. Press down to remove excess water. Wait about 15 minutes until zucchini slices are dry.

Caption: 1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
2. In a shallow plate, combine Panko breadcrumbs, Parmesan cheese, oregano and salt and pepper.
3. In another shallow plate, add flour and salt and pepper.
4. In a bowl, beat eggs with salt and pepper.

Caption: 5. Dredge zucchini slices in flour, eggs, then Panko mixture, pressing it to coat. Place slices on baking sheet. Repeat until all slices are done.
