Caption: AN AUTUMN RECIPE This cake is wonderfully simple to make: just toss the ingredients in a bowl - with a dollop of mascarpone & a few amaretti biscuits - then mix. You don't even need to peel the fruit.

3 eggs
150g muscovado sugar
250g mascarpone cheese
200g self raising flour
1/2 tsp salt
3 apples
80g amaretti biscuits
& for the decoration:
1 apple
1 tbsp apricot jam
a few amaretti biscuits

Caption: Preheat the oven to 180 degrees. Grease & line a cake tin. Beat the eggs in a bowl until pale and fluffy; slowly pour in the sugar & then the mascarpone. Mix until smooth. Sift in the flour & salt. Core & thinly slice the apples, then add to the batter & mix gently.

Caption: Spoon half the cake batter into the tin & crumble the amaretti biscuits over it, then spoon the rest of the batter in. For the decoration, core & thinly slice the apple; arrange the slices in a circle, then warm the jam in a saucepan with 2 tbsps of water so that it becomes syrupy. Glaze the apples and crumble a few amaretti on top. Bake for 45 mins to 1 hour, until golden brown.
