______ This salad couldn't be simpler, but I love it for this time of year. It reminds me of a segue from late summer into early fall. The cinnamon-glazed walnuts and brown sugar vinaigrette are reminiscent of the warm spiced decadence of autumnal comfort food, but the freshness from the pears and leafy greens add a welcome balance.
(The walnuts are my favorite part -- I make a little extra to eat like candy later on in the day.)
Caption: what you'll need 1/2 cup walnuts
1 tbsp butter
2-3 tbsp brown sugar
1/2 tsp cinnamon
4 cups mixed greens, washed and dry
1 pear, your favorite kind
1/3 cup Gorgonzola or blue cheese crumbles (for a milder alternative, use goat cheese crumbles)
2 tbsp balsamic vinegar
1 tsp Dijon or other mustard
3 tbsp olive oil
2 tsp brown sugar
salt and pepper to taste

Caption: melt the butter and walnuts together in a small saucepan over medium-high heat, then add the brown sugar and cinnamon and cook, stirring continuously, until sugar coats the walnuts evenly.

Caption: pour the walnuts onto a sheet of parchment and separate the pieces to let them cool.

Caption: whisk balsamic vinegar, mustard, olive oil, brown sugar, and salt and pepper together in a small bowl until blended.

Caption: to serve divide the greens between two to four plates (depending on the size preferred) and top with thinly sliced pear, Gorgonzola, walnuts, and dressing.
