Watermelon Feta & Mint Salad

Rome is experiencing such sweltering, hot weather at the moment that the idea of cooking and turning on the oven isn’t really very appealing at all. I am happy to eat salads every day and so to keep things interesting and creative, I am trying some new salad combinations. This salad is so easy and simple to throw together, but creates a wonderful marriage of flavours. Sweet watermelon and salty feta cheese is complimented with fresh mint.

WATERMELON, FETA & MINT SALAD Ingredients 🍉Watermelon (cold, straight from the refrigerator) 🍉Greek Feta cheese 🍉bunch of fresh mint 🍉Extra Virgin Olive Oil 🍉Black Pepper (optional) Cut the watermelon into cubes or triangle slices and arrange on a plate. Crumble Feta cheese and distribute the fresh mint leaves over the watermelon. Drizzle a little Extra Virgin Olive Oil over the salad and add a little freshly cracked black pepper. Eat immediately. If you are preparing this before you plan to eat it, refrigerate the salad covered with plastic kitchen wrap, and remove just prior to serving it.
