Blueberry Cupcakes

Everybody loves blueberry muffins, but what if we make them more like cupcakes and add a decadent frosting? You can still enjoy the streusel on top, it’s just hidden under the frosting. You are also free to make these frosting free. You could choose a cream cheese frosting or buttercream. You can colour it with food colouring or choose blueberry jam swirled through. I used a classic buttercream recipe and added red and blue food colouring to create a lovely shade of violet to compliment the blueberries. As Easter is just around the corner, I also decorated some with mini chocolate eggs

ℬ𝓁𝓊ℯ𝒷ℯ𝓇𝓇𝓎 𝒞𝓊𝓅𝒸𝒶𝓀ℯ𝓈 150g caster sugar (2/3 cup) 115g butter, room temperature 2 large eggs 215g plain flour (1 2/3 Cups) 1/4 teaspoon baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon vanilla extract 160g sour cream (or Greek yoghurt) 3/4 cup 125g blueberries Ingredients Streusel 50g dark brown sugar 1 teaspoon cinnamon 80g caster sugar

(makes 18 cupcakes) Preheat the oven to 180°C and line two muffin trays (12 + 6) with paper cupcake cases. Add the butter and sugar to a bowl and using an electric mixer, beat together until pale and fluffy. Add the eggs, one at a time and mix well after each addition. Beat in the vanilla and scrape down the sides of the bowl. beat again until well combined. Sift the flour together with the baking powder, baking soda and salt. Beat the sifted flour mixture into the sugar and butter. Add the sour cream, and beat well until cake batter is smooth. Fold in the blueberries. Mix together in a bowl all the ingredients to make the streusel. Divide the batter between the cupcake cases (I like to use a piping bag). Add about a teaspoon of streusel to the top of each cupcake. Bake for about 25 – 30 minutes in a preheated oven at 180°C and remove cupcakes once they are well risen, golden and an inserted toothpick comes out clean. Allow to rest in the cupcake tin for about 10 minutes, then carefully remove and let cool completely on a wire rack. Eat as is, or decorate with frosting of your choice.
