Earlier this year I spent 20 days exploring Southeast Asia on the Holland America Maasdam. Not only was dining amazing on the ship, but I took a few food focused excursions to explore more of the flavors of this incredible part of the world.
The ship served a lot of Asian inspired dishes to go along with the Southeast Asia itinerary.

As part of the EXC in Depth Program, guest chefs were onboard to teach Asian cooking techniques. Chef Gigg was a contestant on Iron Chef, and specialized in Thai food.
A large screen monitor was on either side of the theater so we could see each technique up close.
We could also try the guest chef’s creations in the daily wine pairing event, Sip & Savor.
The guest chefs also prepared an exclusive dinner in the Pinnacle Grill, an upscale restaurant on the Maasdam.
A week later, Chef Diep joined the Holland America Maasdam to teach Vietnamese cooking techniques
The markets were full of sights and flavors I’d never experienced. This one was in Kuantan Malaysia.
Most excursions I chose included lunch.
You know a restaurant is using fresh ingredients when you see this.
My favorite days were when we learned to prepare traditional dishes on excursions, like this one in Thailand.
This soup was delicious and so fresh. Part of the reason food is so good in Asia is they shop for ingredients almost every day. No shopping for the next week like we do in the United States.
