Lemon Poppyseed Cupcakes
🌼🍋🌼 I made these cupcakes to commemorate International Women’s Day, that is held every year on the 8th of March. Interestingly, in Italy this is mainly celebrated with the ‘Mimosa’ flower (an acacia) and you will see little bunches of yellow everywhere. I find this interesting because the Australian acacia, the ‘Golden Wattle’ is our national flower, and is featured heavily on our coat of arms.
🌼🍋🌼 I really love lemon poppy-seed cake, and prefer a simple lemon icing to a rich frosting, so if you want to just make the cupcakes, and not bother with the fondant decoration I have used, that is the icing I suggest. This is such an easy recipe to put together and as they only take 25 minutes in the oven, they are fantastic to make last minute or to cure a sugar craving.
Firstly I want to show you how I made the ‘mimosa’ (Italian) flowers ... or wattle as it’s called in Australia.
I cut blossoms from rolled fondant first, to ensure all the little balls would be the same size
I then painted each ball with edible glue and rolled them one at a time in yellow sugar
Time to decorate the white fondant cupcake tops
Green Royal Icing for the foliage, white royal icing to ‘glue’ flowers to toppers.
🍋 LEMON POPPY SEED CUPCAKES Ingredients 200g flour 1.5 teaspoon baking powder 30g almond meal (ground almonds) 2 tablespoons poppy seeds 125g butter, at room temperature 150g sugar 2 teaspoons lemon zest 2 large eggs 2 tablespoons milk 2 tablespoons lemon juice pinch salt
