Crumbly Mandarin Cake
ingredients 5 mandarins thinly sliced 225g butter 3 tsp vanilla extract 1.5 cups sugar 3 tbsp mandarin juice 1.5 cups plain flour 1.5 tsp baking powder 2 eggs at room temperature 1/2 cup milk
1. Preheat oven to 175 degrees. 2. Boil mandarin slices in water for about 3 minutes. 3. Drain and lay slices on a paper towel. 4. Set half of the butter with 1/2 cup sugar and vanilla at the bottom of a cake tin, heat in the oven until melted. 5. Whisk in 1 tbsp mandarin juice.
6. Combine flour, rest of the sugar, eggs, vanilla, rest of the mandarin juice and baking powder in a large bowl. 7. Arrange the mandarin slices at random at the botton of the cake tin. 8. Pour the cake batter on top of the mandarin and bake for 40-45 minutes. 9. Cool and serve
