The color of the dishes on our table and food in general have the power to evoke moods and make us feel more cheerful, calmer, more energetic or more melancholic.

Ingredients 2 eggs 100 gr flour 180 ml milk 25 gr melted butter 1 pinch of salt 200 gr mascarpone 2 tablespoon powdered brown sugar Champagne sticks (preferably homemade) 1 cup of coffee (to wet the sticks) Cocoa powder

Method In a bowl mix the eggs, butter, milk, salt and flour and beat with a wire rod until a homogeneous and fine consistency is obtained. Heat a frying pan and pour some batter, turning to spread it in a thin layer. Leave for 1 or 2 minutes until bubbling begins and flip the sheet. Remove onto a plate and repeat with remaining batter. Beat the mascarpone with the brown sugar. Break the sticks and soak quickly in the coffee, not letting it soak too much. In a crepe sheet spread a portion of mascarpone, place bits of wet sticks and fold in half and then in half again. Repeat with the remaining crepes. Sprinkle the crepes with the cocoa powder.
