Salted Caramel, Peanut Butter, Millionaires Shortbread
Not for the faint hearted!
It seems I am back to the peanut butter recipe obsession with these amazing peanut butter, salted caramel, millionaires shortbreads. Very rich and sweet but the salted crunch of the peanuts manages to stop them being too sickly. The addition of salted peanuts in the shortbread base also helps balance the flavours.
Ingredients: For the shortbread: 250g of plain flour 200g chilled butter, cubed 75g chopped salted peanuts 100g caster sugar For the peanut layer: 160g peanut butter 100g butter 140g icing sugar For the caramel: 1 can carnation caramel Pinch of salt (Optional caramel vodka) For the chocolate top: 200g plain chocolate 100g milk chocolate 50g butter
I was lazy and made my shortbread in the food mixer but you can do this by hand, rub or blitz the butter and flour, add the sugar and chopped peanuts and mix.
Press the shortbread mix into a lined tray.
Bake at 180 for 25 mins until golden and leave to cool in the tin
Make the peanut butter layer
Put the peanut butter and butter in a pan and heat until melted and smooth
This only takes a couple of mins
Add the sifted icing sugar
Mix the icing sugar into the peanut butter and butter mixture
Spread over the shortbread and chill
Move onto making your caramel
Melt the carnation caramel in a pan, add a tbsp of caramel vodka ( if using, bourbon would also be good) add salt flakes to taste, simmer until slightly darker, about 2-3 mins
Taste your caramel again and add more salt if you think it’s needed. Try not to add more alcohol as it will stop it setting.
Spread over the peanut layer and chill for about 2 hours
When the caramel is set, melt the chocolate and butter in 30 sec bursts until glossy.
Spread over the caramel and leave to set
Portion into squares
