Banana, White Chocolate and Cherry Cup Cake Muffins

These are lovely light alternative to banana bread. Fluffier than a banana bread loaf they feel a more luxurious and special way to use up over ripe banana. The addition of cherries and white chocolate is not essential and you could use milk chocolate if you find white too sweet.

Ingredients: 125g butter 200g caster sugar 1 tsp vanilla extract 3 ripe bananas 4tbs Greek yogurt 2 large eggs 1 tsp bicarbonate of soda 1/2 tsp baking powder 300g plain flour 40g cherries 50g white chocolate buttons

Melt the butter

Add the sugar and vanilla

Add the banana and mash in with a fork

Break in the eggs and add the yogurt

Beat with a wooden spoon

Sift in the bicarbonate of soda, baking powder and flour and fold in

Mix in the cherries and chocolate

Use an ice cream scoop to ladle out into paper bun cases, it should make 12. Bake for 20mins at 180
