White Chocolate Lemon and Cardamon biscuits

Warming and sweet

These lemon and cardamon biscuits are a lovely winter treat and taste great with a traditional cup of tea or a good cup of coffee They are something a little different from the warming spice of a ginger biscuit, but just as satisfying. For those who don’t have such a sweet tooth you can leave out the white chocolate or you could substitute with milk chocolate if you prefer.

Ingredients: 225g of butter, room temperature 150g castor sugar Zest of 1 lemon 250g plain flour 100g ground almonds 3tsp ground cardamon or 1 tsp of seeds ground in a pestle and mortar Handful of white chocolate buttons

Cream the butter sugar and lemon zest with an electric whisk until light and fluffy

Stir in the flour, almonds and cardamon, mix until you have a firm dough

Turn out onto your surface and lightly kneed

Break off small pieces and roll into a ball, if you are not adding chocolate flatten slightly and put straight into the oven at 190 for 12 minutes

Take a ball and flatten in your hand, press in a chocolate button and bring the biscuit dough back round to incase the chocolate in the centre. You could also mix in small chocolate chunks instead of 1 large button

Place the biscuit dough balls on a lined baking tray

Press flat with your hand or a biscuit stamp to leave indentations if you have one Bake at 190 for 12 mins

Leave to cool for a couple of minutes on the tray before transferring to a wire cooling rack
