Finally it is easier to buy the bergamot at the fresh market at the supermarket. This citrus is very particular, with a persistent bitter taste that however goes very well with chocolate. I therefore thought that it would be very good in a cake. I made this recipe for this dessert ideal for breakfast.

How to do: Grate the peel of the two bergamots and then extract the juice. Grate the chocolate and boil the cream and melt the chocolate and form a ganache. In a bowl, mix the flour with the cocoa and baking powder. In a bowl, work the sugar with the eggs and get a cream. Add the ganache, the bergamot juice and the peel to the mixture. Mix well and then pour the oil.

Pour the flour and mix the mixture until the final result is obtained. Pour the mixture into a previously buttered 22 - 24 cm diameter cake tin. Bake the hot oven cake at 180 ° C for about 40 - 45 minutes. Let the cake cool and then sprinkle with icing sugar.
