Bacon and Avocado Benedict


This twist on the classic Eggs Benedict is a little lighter with the addition of mashed avocado. You can also use ham or chorizo instead of grilled bacon, all taste wonderful with the sharp hollandaise and the fresh avocado.

Ingredients: Hollandaise; 2 egg yolks 3 tbs white vinegar 150g Butter Lemon juice Salt and black pepper For the rest; Toast Grilled Bacon, Ham or Chorizo Poached eggs Avocado Lemon Juice Salt and black pepper

Half your avocado, remove the stone and scoop out into a bowl ready for mashing

Use a fork to mash, adding lemon juice, salt and black pepper.

Put 3 tablespoons of white vinegar into a saucepan

Bring to the boil and reduce

Add the butter to the pan and melt

Separate your eggs

You can use the whites in another recipes such as meringue

Use a blender to whisk the egg yolks

Add a splash of lemon juice and seasoning

Slowly add the melted butter and vinegar to the whisked eggs whilst the blender is still running Spread the avocado on some toast, top with grilled bacon and a poached egg then spoon over the hollandaise.
