Paleo Black Bean
This is not your usual Chocolate cake.
Ingredients 1 egg 1 can of black beans (drained and washed) ⅓ cup of maple syrup (or honey) ¼ cup of applesauce ½ cup cocoa powder (unsweetened) ¼ cup almond flour 1 teaspoon baking powder 4 squares of dark chocolate 1 pinch of salt coconut flakes to taste For the ganache ½ cup cocoa powder (unsweetened) 2 tablespoon coconut oil 1 tablespoon maple syrup
Method Heat the oven to 180º In a food processor add the black beans, syrup, applesauce, and salt. Process to combine. Add in almond flour, cocoa powder and egg. Mix thoroughly. Add the baking powder and pulse for a few more seconds. Grease 4 ramekins with coconut oil. Put ¼ cup of dough in each ramekin. Put a square of chocolate and cover each ramekin evenly with the remaining dough. Bake for 25 minutes. Remove from the oven and let cool for 10 minutes. With a knife to pass over the edges and then turn the ramekins on a plate. In a pan melt the coconut oil with the cocoa and the syrup. Pour a little in 2 of the cakes and put the other 2 on top. Finish covering each tower with the remaining ganache and end with the coconut flakes.
