a classic cookie twist
I love shortbread! Its sweet, buttery, crunchiness is so yummy!! So I was super excited to find this cute twist on the shortbread cookie! My kids and husband love these and I’m sure you and yours will too! But beware! These tiny bits of goodness are mildly addictive!
1 cup unsalted butter, COLD 1/2 cup white sugar 1/2 teaspoon vanilla extract 2 1/2 cups flour 1/2 teaspoon salt 8 tsp multi-colored nonpareils
Butter a 7x11 pan and then line both ways with parchment paper leaving some hanging over on all sides.
Cut cold butter into cubes. Mix butter, sugar, and vanilla until it starts to come together. May take a few minutes.
In separate bowl sift the flour and salt.
Mix flour into butter mixture. Dough will be crumbly.
Knead the dough in the mixing bowl.
Add nonpareils and knead into dough.
Pat dough into prepared pan.
Sprinkle on some nonpareils and slightly press them into dough. Chill for 2 hours.
Remove dough from pan and cut into small squares.
Place dough squares on a chilled cookie sheet.
Bake in 350 degree oven for 8-10 minutes.
Bag them up and give them to friends!
