Penne Pasta Salad with Peanut Dressing 🍅 This easy salad was inspired by Bangkok (Thai) Salad, in original recipe does not use Pasta, It’s made with cabbage, letucce, pineapple, cucumber or you can use all kinds of veggie in it. The creamy peanut dressing create kind of like a sweet, spicy and sour flavor 'bomb' in every bite, that makes it so good. I'm sure you'll want to put it on everything! You can serve this salad as a light lunch. 🍅

Penne Pasta Salad with Peanut Dressing Ingredients : 200 gr Penne Pasta 1 small head Lettuce, chopped 2 cup of fresh pineapple, chopped 2 small cucumber, halved lengthwise, seeded and thinly sliced 1/2 medium red cabbage, thinly sliced 1 piece of onion, thinly sliced 2 eggs boiled egg (take white), thinly sliced 1/2 cup of cherry tomatoes, halved or quartered 1 lemon (Can be added apples, carrots, potato chips & any crunchy vegetables that you like) Peanut Dressing: 150 gr Peanut butter (choose good quality) 100 gr mayonaise 2 egg yolks 5 tbsp Chilli sauce 3 tbsp tomato sauce 1 tbsp garlic powder 1/4 teaspoon Pepper 1/2 teaspoon salt 100 ml warm water 2 tbsp sesame oil 2 tsp vinegar Good pinch of sugar
How to make: 1. In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain. 2. Dressing : Combine all of the ingredients in a blender and process until completely smooth. Refrigerate until ready to serve. 3. Salad : Combine all of the vegetables & Penne Pasta in a bowl along with the chopped onions, eggs, and toss to combine. If serving right away, half the peanut dressing to the salad and toss well, otherwise, serve the dressing on the side so the salad doesn't get soggy. 4. If desired, serve with lime wedges on the side.
