For a total vegan option, we opted to melt these dark raw chocolate bars from #lovingearth to coat the energy balls.
INGREDIENTS 1.5 CUPS PITTED DATES (soaked & drained) 1 CUP ALMOND NUTS 1/4 CUP PUFFED QUINOA 1 TBS ALMOND BUTTER 2 TBS COCAO POWDER DASH OF SEA SALT
METHOD BLITZ DATES, ALMONDS, COCAO POWDER, ALMOND BUTTER TOGETHER IN BLENDER FOR 5 MINUTES. IT IS READY WHEN IT STICKS TOGETHER TO BE ROLLED INTO BALLS. ADD PUFFED QUINOA & MIX IN. ROLL THEM INTO BALLS, & COATED THEM IN THE MELTED CHOCOLATE. SPRINKLE SEA SALT ON TOP.
