Banana Bread A gluten free, low FODMAP & healthy recipe from Friendly Little Kitchen
2 eggs 1/4 cup milk of choice 2-3 ripe bananas, mashed 1 tsp apple cider vinegar 1/2 tsp vanilla extract 1 cup buckwheat flour 1/4 cup almond meal 2 tsp GF baking powder 2 tsp cinnamon 1/2 cup walnuts, chopped 1/4 cup shredded coconut
Preheat the oven to 180C and grease a loaf tin. Place all ingredients, except 1/4 cup of walnuts and the shredded coconut, in a large bowl and mix well. Pour mixture into the tin, sprinkle walnuts and coconut over the top, and place in oven for 45 minutes.
