Granola Bars

With honey & Coconut oil

There are countless variations that I am making, be it the Quinoa version or simpler versions, the end result is always the product of what is currently within my pantry.

Ingredients 3 cups rolled oats 1 cup puffed Spelt 1 cup of pecan nuts coarsely chopped 1 cup coarsely chopped almonds 1 cup of seed mixture (flaxseed, sunflower and pumpkin) 1 pinch of salt ¾ cup of honey ¾ cup of coconut oil Melted dark chocolate

Method Preheat the oven to 185ºC. In a bowl mix the oat flakes, the puffed spelt, the walnuts, the almonds, the seeds and the salt. In a bowl bring the honey and coconut oil to the microwave for 1 minute at full power. Mix well. Add the honey mixture to the oats mixture and mix very well. Line a tray with parchment paper and place the mixture on top, smoothing with a spoon. Put another sheet of vegetable paper on top and with a mug press as much as possible. Bake for about 17 minutes or until golden brown. Remove and let cool completely. Melt the dark chocolate in bain marie and with a fork sprinkle over the granola. After completely solidified cut into small bars. Store in refrigerator for up to one week.
