Be My Valentine
DARK CHOCOLATE CUPCAKES for VALENTINES DAY
Valentines Day is a great excuse to bake something decadent for those you love, and you don’t have to limit yourself to just spoiling your partner, or lover….. Valentines Day is a day to demonstrate your love and gratitude to all your loved ones, be that children, parents, pets or anyone close to you deserving your love! I’ve chosen a Dark Chocolate cupcake for this Valentine’s Day recipe, and I’ve used a variety of sweets and two different frosting recipe’s for the final presentation.
Dark Chocolate Cupcakes 💕125g butter 💕185ml water 💕200g dark brown sugar 💕100g dark chocolate 💕75g plain flour 💕75g Self Raising flour 💕40g dark bitter cocoa 💕30g almond meal 💕2 eggs 💕100g chocolate chips
Preheat oven to 160°C. 💕In a heavy saucepan, melt together on a gentle heat the chocolate, butter, water and sugar. 💕Sift together the flours and the cocoa. Transfer chocolate mixture to the bowl of an electric mixer and add all dry ingredients; the sifted flour, cocoa and also the almond meal. Mix well and incorporate into chocolate mixture. 💕Add eggs one at a time, mixing well after each addition. Stir through chocolate chips. Pour cake mixture into a jug to facilitate filling cupcake cases. Fill cupcake cases to 3/4 full. 💕Bake at 160°C for 20 -30 min. Remove from oven and allow to cool completely on wire rack before decorating.
Dark Chocolate Frosting 💕170g butter 💕230g cream cheese (Philadelphia) 💕170g dark chocolate 💕1 – 2 tablespoons dark bitter cocoa 💕375g icing sugar Melt butter and chocolate together either in a microwave oven or a ‘bagno maria’, and allow to cool completely. Transfer to bowl of electric mixer. Add the cream cheese to the chocolate mixture and mix until combined. Add cocoa & half quantity of icing sugar, incorporate to mixture. Add remaining icing sugar, and mix until all icing sugar is combined, and frosting has a smooth consistency.
Simple Buttercream 💕280g butter softened 💕550g icing sugar 💕2-3 tablespoons milk food colouring – (colour & quantity personal choice) Beat the butter in a large bowl until soft. Add half of the icing sugar and beat until smooth. Add the remaining icing sugar and add the milk, 1 tablespoon at a time and beat the mixture until creamy and smooth. Stir in the food colouring (a few drops at a time) until well combined, and you have achieved desired colour.
