with chocolate chips
Ingredients : 120 g wheat flour T110 (or spelt flour T110) 60 g almond powder 50 g muscovado sugar 1 tbsp baking powder 100 g apple sauce 30 g coconut oil 5 cl almond milk 1 egg 1 pinch of salt 2 tbsp acacia honey (or agave syrup) 70 g 60% dark chocolate
Instructions : 1. Crush boorishly the chocolate. 2. Mix every dry ingredients in a bowl except chocolate chips. 3. Make a well and add apple sauce and egg. Stir gently. 4. Add the almond milk stirring with a whisk. 5. Then, add the coconut oil slightly melted (about 30 sec. in microwaves). Mix well. 6. Add chocolate chips and mix again. 7. Cover the bowl with plastic wrap and put in the fridge for 30 minutes (1h is better).
8. Ten minutes before putting in the oven, preheat oven to 240°C. 9. Meanwhile, oil and flour generously your madeleine molds. 10. Pour about 1 tbsp of dough in every mold. 11. When the oven is very hot, put the madeleine in the bottom approximately 6 or 8 minutes. Have to be careful that don't cook them too much, they cook fast.
