Baked Ratatouille

🍅 What is the first thing that comes to your mind when you heard Ratatouille? Remy "the little rat" cook a colourful french dish. "Ratatouille" is animated produced by Disney-Pixar Film, Remy "the rat" and Colette cook a marvelous of ratatouille and become popular dish. 🍅


Ratatouille (isratatouille niçoise) is a traditional southern French Provençal stewed vegetable dish, originating in Nice. It was originally a meal made by poor farmer's and usually prepared in the summer with fresh "summer vegetables" such as tomatoes, onions, zucchini, garlic, bell peppers and other various herbs, but now eggplant is usually added to the ingredients. The dish can be served with a side dish or an appetizer along with bread, rice or pasta.

This is my version of "Easy and Classic Baked Ratatouille" recipes for you to try at home. Prep : 30 mins Cook : 45 mins Total Time : 1 hour 15 mins Yield : 4 servings Level : Easy

INGREDIENTS : 5 tbsp olive oil or vegetable oil 1 medium onion – chopped 5 cloves of garlic – minced 4 large of tomatoes - boiled for fresh tomato sauces or you can use tomato paste 2 medium zucchini - chopped/sliced 3 medium eggplant - chopped/sliced 4 medium radish - sliced thin 1 green pepper - chopped/sliced 2 chili pepper - chopped for spicy (you can skip) 1 tbsp lemon juice 1 tbsp dried thyme, oregano Few sprigs fresh basil & parsley Salt and fresh ground black pepper 50 gr  shredded mozzarella cheese, for topping

Steps : 1. Preheat oven to 180 degrees C. 2. In a medium sauce pan, sauted minced onion until soft, then add the garlic, stirring occasionally, until wilted and lightly caramelized for a few minutes. Add fresh tomatoes sauce homemade, lemon juice, bring to a boil and then simmer, add bell pepper & chili pepper if you like and sprinkle with herbs, salt- black pepper to taste, and cook for a final 5 minutes. 3. Heat 1 tbsp olive oil in a medium saucepan. Add the eggplant, season generously with salt-black pepper, until the eggplant is soft and wilted. Move the eggplant out of the pan and onto the platter to drain. Cook the same way for, zucchini & radish, then add it to the platter with the eggplant. 4. Add 1 cup of tomato sauce over the bottom of pie or casserole dish (dia. 18-20 cm). Layer the sliced eggplant, zucchini & radish like dominos. Fit as many of the vegetable slices in as possible. Pour 1 tbsp sauce over the top, sprinkle with herbs. Cover with foil and bake in the preheated oven until bubbling for 30 minutes. After 30 minutes, remove the foil and add the mozzarella cheese and basil to the top. Return to the oven and bake for 15 minutes, or until the cheese is melted and lightly browned. 5. Served "Baked Ratatouille" with croissant, french bread, rice or pasta. Served warm or it gets even better the next day, served slightly chilled or at room temperature. Note : You might also like Ratatouille in stew version.
