Homemade Delight

Focaccia di Recco

SOLID INGREDIENTS: • 500 gr of bread flour (or all purpose flour) • a generous pinch of salt • 500 gr of Crescenza cheese (or Stracchino cheese) LIQUID INGREDIENTS • 50 ml of extra virgin olive oil (+ a bit to grease the baking tray; + a bit to grease the dough's surface) • 200 ml of water UTENSILS •a bowl • a rolling pin • some baking paper • a baking tray

START MIXING BREAD FLOUR, EXTRA VIRGIN OLIVE OIL, WATER, SALT.

START KNEADING

PUT THE DOUGH IN A CAPACIOUS BOWL FOR 30 MINUTES... NOW, RELAX YOURSELF!

LATER ON... DIVIDE THE DOUGH IN TWO SMALLER DOUGHS

DOUGH n.1

STRETCH ONE DOUGH USING A ROLLING PIN AND YOUR HANDS (UNTIL IT REACHES AN ELASTIC CONSISTENCY).

PUT SOME BAKING PAPER ON THE BAKING TRAY AND GREASE IT WITH EXTRA VIRGIN OLIVE OIL. PUT THE DOUGH ON THE BAKING PAPER AND STRETCH IT UNTIL IT COVERS ALL THE BAKING TRAY.

ADD CRESCENZA CHEESE ALL AROUND THE DOUGH'S SURFACE. BE GENEROUS, REMEMBER, THIS IS A CHEESY RECIPE! ☆Tip☆ It won't be a "typical" focaccia di Recco but I'm pretty sure that it tastes delicious with Gorgonzola cheese too (instead of Crescenza cheese).

DOUGH n.2

REPEAT THE PREVIOUS "STRETCHING" STEP WITH THE SECOND DOUGH. COVER THE CHEESE WITH THE SECOND DOUGH STRETCHED. ☆Tip☆ Create a thick board with the dough... It's going to be crusty and delicious!

PUT SOME EXTRA VIRGIN OLIVE OIL ON THE DOUGH'S SURFACE AND CUT JUST A LITTLE BIT THE DOUGH'S SURFACE TO CREATE HOLES!

PREHEAT THE OVEN FOR 10 MINUTES. COOK FOCACCIA FOR 20/25 MINUTES AT 230°C (446°F). REMEMBER, EVERY OVEN IS DIFFERENT!
