A first time experiment w the Follow Your Heart vegan egg - a mix of mushroom & seaweed proteins that are the closest "product" to an egg I've seen. I still prefer tofu, though, as I always liked my eggs with an overcooked texture and tofu does that. I paired this with a spicy sw potato & bean hash.
