with basil & greek yoghurt icing

2 cups gluten free flour 1 tsp baking powder 1 tsp sea salt 2 eggs 3/4 cup caster sugar 2/3 cup olive oil 1/2 cup soy milk (or milk of choice) 1 tsp apple cider vinegar 1/2 tsp pure vanilla extract 1/2 cup lemon juice + rind of 1 lemon

Preheat oven to 180C. Line two 8-9 inch cake tins. Combine dry ingredients. In a separate bowl, whisk together sugar & eggs for 5 mins until thick & pale. Combine remaining ingredients in another bowl. Gradually add dry ingredients to egg mixture & whisk on low. Once combined, gradually add oil mixture. Divide cake mixture into the two tins. Bake for 20-25 mins.
