Gluten Free dark whole grain bread

It took me a while to develop this recipe. It was important for me to develop an easy recipe, that fits our life with full time jobs, hobbies, sport, friends, breakfast, lunch and dinner... This bread is so easy that all you need are few minutes to stir the dough. The rest is pure planning and habit. The recipe is both in English and in Danish.

English: 140 g buckwheat flour 140 g corn flour 125 g oatmeal 165 g broken buckwheat groats 80 g whole buckwheat groats 90 g sesame seeds (or a mix between sesame seeds and sunflower seeds, half half ) 75 g flaxseed 20 g psyllium husk powder 20 g carob 1 big teaspoon salt 1 liter water Mix everything in a bowl Let it rest for at least 1 hour or "a nights time" Mix it with a handheld mixer using dough hooks. With a spoon add it to 2 bread moulds. Don't press the dough, this is very important. You want to keep the air in the dough. Bake it for 1 hour and 10 minutes at 180 degrees (350f)

Danish: 140 g boghvedemel 140 g majsmel 125 g havregryn 165 g knækket boghvede gryn 80 g hele boghvede kerner 90 g sesamfrø (eller et mix mellem sesamfrø og solsikkekerner, halvt af hver) 75 g hørfrø 20 g psyllium husk 20 g carob 1 stor teske salt 1 liter vand Mix alt i en skål Lad det hvile i mindst 1 time gerne natten over Rør i dejen med en håndmixer og dejkroge Brug en stor ske til at fordelen dejen i 2 brødforme. Lad være med ar presse dejen ned, dette er meget vigtigt, da dejen skal holdes luftig. Bag brødet i 1 time og 10 minutter ved 180 grader
