Cajun-Spiced Vegetables & Halloumi Pita Sandwich

The secret to creating quick, delicious & healthy meals whenever they're needed, is having the right fresh ingredients in your fridge & pantry. Basics in my house always include vegetables such as leeks, mushrooms, fennel & zucchini, plain yoghurt (in my case lactose-free), organic lemons, some type of bread, eggs & packaged tofu & halloumi along with cherry tomatoes. Beans, pasta, different rices & grains, vegetarian broth, a wide selection of spices, mustards, vinegars & oils are a must.

Cajun-Spiced Vegetables & Halloumi Pita Sandwich This sandwich contains fried Cajun-spiced vegetables, fried halloumi, yoghurt, fresh herbs & argula. It is quickly made & tastes delicious. Ingredients: 🌱 1/2 large zucchini, washed 🌱 a handful of mushrooms 🌱 1/2 fennel bulb, washed 🌱 1/2 an onion, peeled 🌱 1/2 clove garlic - optional 🌱 a handful fresh cilantro & mint leaves, washed 🌱 thick chunks pita or other bread 🌱 2 handfuls fresh argula, washed 🌱 plain yoghurt 🌱 Cajun spice 🌱 Olive oil 🌱 halloumi, sliced 🌱 1-2 handful cherry tomatoes, washed

Steps: 🌶 Cut zucchini in half again & together with the fennel into thin slices, quarter the mushrooms & thinly slice the onion & garlic if using, chop the mint & cilantro medium fine. Chop cherry tomatoes in half. Set aside. 🌶 Heat olive oil in a wok or pan over high heat, add the mushrooms, onions & garlic & stir-fry 3 minutes lowering heat so as not to burn them, add zucchini, fennel & 1 tsp Cajun spice. 🌶 Stir-fry for 3 more minutes then add tomatoes & continue frying another 3 minutes. Lower heat to low, cover & simmer 5 minutes stirring occasionally. Adjust seasoning.

🌶 Meanwhile heat oil in another pan over high heat add the halloumi slices & fry from both sides until crisp about 5 mins. Drain slices on papertowel, keep warm. 🌶 Open the pita bread to make a pocket, place some vegetables & halloumi slices inside, then yoghurt, chopped herbs & lastly argula. 🌶 Serve in a napkin & enjoy!
