Jewelled Rice

This magnificent persian rice dish called jewelled rice perfectly fit for Christmas Table! Colorful, fragrant,100% Vegan.

Ingredients: 250 g Brown Basmati rice (quick cook, 10 mins ) 1 pomegranate Zest of organic orange A carrot 120 g nuts: almond and pistachios Fresh mint leaves A shallot

Pinch saffron A teaspoon of cumin seeds 1/2 teaspoon of turmeric A bay leaf 1 cinnamon stick 120 g dried fruit : apricots, raisins, dates, coarsely chopped 1/1 teaspoon of salt 1 lemon Olive oil

In a small glass of hot water add a pinch of saffron and set aside. Finely chop onion. Grate carrots. Slice the orange rind into strips. Set aside. Heat a 3-4 tbsp of olive oil in a pot. Add cumin seeds and cook until fragrant, 1 minute, then add turmeric, bay leaves, and the cinnamon stick, stir and fry for another minute until fragrant.

Add onion, carrots, orange rind, and dried fruit. Cook until about 5 minutes.Cook the rice as per the cooking instruction on the package, adding the water with the saffron and salt. Finely chop mint leaves. Remove the seeds from the pomegranate. Roast the nuts in a dry skillet until fragrant and golden.

Drain the rice and let it cool for some minutes. After a few minutes season with fried vegetables and fruits, mix well, sprinkle with herbs, nuts, and pomegranate seeds. Serve rice with a lemon wedge.
