Right Side Up Cake

There was a pineapple in the house and I didn't want to lose it's yellowness, as you would when baking it upside down

I N G R E D I E N T S 1 cup gluten free flour with xanthan gum 1 ½ tsp baking powder ⅛ tsp baking soda ⅛ tsp salt 150ml agave nectar / maple syrup 60 ml apple sauce 50 ml coconut oil 5 ml vanilla extract / powder 150 ml warm water 15 ml lemon juice

M E T H O D Preheat oven to 160 degrees Celsius Grease a 20 - 22cm cake pan Sift all dry ingredients together and mix well to combine Add agave, coconut oil, apple sauce and vanilla Mix well with a metal spoon until completely combined Add lemon juice to warm water and stir mixture into batter Continue stirring until completely combined Pour batter into prepared cake pan Peel and core pineapple Slice into rings or chunks or whatever your pineapple slicing skill level Place pineapple pieces on top of batter in cake pan Bake for 35 minutes Cake is ready when inserted skewer comes out clean Serve warm with a dusting of icing sugar or ice cream
